John Sands   |    What’s New

With Father’s Day just around the corner, it is not too late to help celebrate that special someone who has played a key role in your life. Father’s Day celebrates a whole array of people who have made a difference, so think outside the box, get creative and let’s celebrate!

How to cook a special breakfast in bed

If socks and a new jumper aren’t on the list for the special person in your life, maybe a warm breakfast in bed might be the perfect gesture!

Chilli Scrambled Eggs

Ingredients

  • 1 tsp butter
  • 2 eggs
  • ¼ thickened cream
  • 1 red chilli seeds removed, finely diced
  • 1 sprig of spring onions finely chopped
  • 2 tbsp parmesan finely grated
  • 1 tsp of siracha sauce
  • Fresh coriander, fresh cherry tomatoes and chilli salsa to serve

Instructions

  1. In a bowl gently crack the eggs ensuring no shell falls in. Add chilli, cream, grated cheese and season with salt and pepper. Gently whisk ingredients together until combined.
  2. Heat butter in a medium-sized frying pan over medium heat until it gently bubbles. Pour in egg mixture and leave for approx. 20 seconds, allowing the bottom to cook slightly.
  3. Optional: add the siracha into the slightly cooked mixture. You can choose to have this on the side after serving.
  4. Using a spatula, gently move the eggs around the pan, pushing the cooked egg from underneath to the top and allowing the uncooked egg to move to the pan’s surface. Once most of the egg is cooked remove the pan from the heat, pushing the eggs around a few more times to allow the rest to cook through.
  5. Add the spring onions before the eggs are removed from the pan
  6. Serve immediately, top coriander, and serve with fresh tomatoes, your favourite bread and chilli salsa.
